Ultimate Comfort Food? Meatloaf. With Mashed Potatoes….and gravy.

Meatloaf Muffins @ Smart Mom Stuff!

When I think of comfort food, it’s pretty much anything mom makes in the fall. Even if she didn’t make it in the fall. Do you feel me?
I’m a mom now and I can make anything I freaking want for dinner (hehe) as long as I am willing to make it anyways.

Meatloaf doesn’t exactly sound the most appealing though does it? I didn’t like the sound of it when I was younger honestly. I started liking it more when I became a mom! (haha)

But somehow, someway – when you put a meatloaf mixture into a muffin shape and top it with awesome homemade BBQ sauce??? The kid’s will practically break their little necks taking a second look!

(That’s just a phrase though – I think they will be more open to “meatloaf” in this manner)

Anywhoosier – they are cute, super easy to make, freezer friendly (you could double the recipe and have some ready to bake whenever – just store them in those aluminum throw away tins instead), and a great dish to make when the weather starts to turn colder. I like it with mashed potatoes and any kind of vegetable – for this post I made it easy on my self and used one of those steam-able frozen packages of corn. Those frozen vegetable mixes save a ton of time when other elements of a dish are more time consuming. Don’t kill yourself over what should be a simple dinner.

The three main things you need are only ground beef – eggs – and breadcrumbs. I like to use Ritz Crackers for this type of breadcrumb – you can find a post about how I make my own varieties of breadcrumbs right here.

Ingredients
Meatloaf Recipe
BBQ Sauce
Servings: muffins
Instructions
Prep
  1. Preheat oven to 375 degrees.
Process
  1. Thoroughly mix ground beef, eggs, all seasonings, and 3/4 the amount of breadcrumbs into a large bowl.
  2. If mixture is too wet to form into one large ball, continue adding breadcrumbs until a stable consistency forms. It should not be sticking to your hands very much and you should be able to shape it.
  3. Press meatloaf mixture into one medium loaf pan or into 6 regular cupcake tins.
Cook
  1. Bake at 375 degrees for 20 minutes. Use this time to prepare BBQ Sauce - simply mix all sauce ingredients rogether in a small bowl. Adjust spices to your liking as needed.
  2. Spoon BBQ sauce onto Meatloafs (really to your liking) and then continue baking for 15-20 more minutes.
