Ultimate Comfort Food? Meatloaf. With Mashed Potatoes….and gravy.
When I think of comfort food, it’s pretty much anything mom makes in the fall. Even if she didn’t make it in the fall. Do you feel me?
I’m a mom now and I can make anything I freaking want for dinner (hehe) as long as I am willing to make it anyways.
Meatloaf doesn’t exactly sound the most appealing though does it? I didn’t like the sound of it when I was younger honestly. I started liking it more when I became a mom! (haha)
But somehow, someway – when you put a meatloaf mixture into a muffin shape and top it with awesome homemade BBQ sauce??? The kid’s will practically break their little necks taking a second look!
(That’s just a phrase though – I think they will be more open to “meatloaf” in this manner)
Anywhoosier – they are cute, super easy to make, freezer friendly (you could double the recipe and have some ready to bake whenever – just store them in those aluminum throw away tins instead), and a great dish to make when the weather starts to turn colder. I like it with mashed potatoes and any kind of vegetable – for this post I made it easy on my self and used one of those steam-able frozen packages of corn. Those frozen vegetable mixes save a ton of time when other elements of a dish are more time consuming. Don’t kill yourself over what should be a simple dinner.
The three main things you need are only ground beef – eggs – and breadcrumbs. I like to use Ritz Crackers for this type of breadcrumb – you can find a post about how I make my own varieties of breadcrumbs right here.
